Carrott Cake and Maple Cupcakes Galore!

The other day I cleaned my whole apartment…including my kitchen…I mopped the floors and scrubbed the stove top etc. Then What did I do the very next day? I decided to bake a carrott cake…and then the next day bake maple yellow cupcakes with with chocolate “M”s for Marks bday. After all that baking…YES…my kitchen is still quite beautiful. Mostly this is probably due to the fact that I am the only one using my kitchen until a week from Sunday. Anyhoo the carrott cake I made came out quite tasty….not that beautiful ( I was on a time crunch) but still yummy!

Last year for Mark’s birthday I made a HUGE birthday funfetti cake/devils food cake with twizzlers….this year I decided to experiment…I made maple yellow cupcakes with chocolate “M”s. The cake probably would have tasted less like sweet bread or cornbread if A. I didn’t use whole wheat white flour and B. I had added more maple. OH well. Then being the impatient person that I am..I made these gorgeous chocolate Ms that I Had refridgerated…but I just couldn’t wait to put them on the cupcakes. So instead of standing up and looking offical and proud of being the letter “M” they coiled down and melted to look like well….poop. I learned my lesson. Happy Birthday Mark.

Drenching My Stress..Where Has All the Rum Gone?

I have been thinking a lot about grandparents lately, my grandma is not doing so well and it has been creating a lot of stress. The way I like to eleviate the stress is bake bake bake. My grandpa makes the best Rum cake I have ever tasted. Having never baked his Rum cake myself…is there a better time then now.  Not to toot my own horn but…TOOT my cake turned out beautifully. Moist, crunchy on top with the pecans and DRENCHED in Bacardi Select…can any body quote Jack Sparrow and say, “But why is the rum gone?” where did it all go? Not in Keira Knightley’s stomach but all in my friggin cake!

I went with Garrett to BevMo to go pick up so mo rum…I gave my Captain Mo to my sis right before Xmas so she could make the rum cake…plus I am usually not a rum drinker (anymore…I have various reasons). I was just going to buy regular Bacardi Gold but this one was the same price and it was aged more. Not that I noticed a difference in taste but whatever…haha.
What I love about this recipe of my grandpa’s is you can either just put in a cup of rum…which is what the recipe calls for (plus another cup for the glaze) or you can put two cups. The more you add the more “warm” you will feel…this rum cake is perfect for Christmas Eve dessert.

I KNOW it is not Fall but…I LOVE PUMPKIN! Being home last week and trying to keep my grandpa occuppied on anything other then what is going on with my grandma, I took it upon myself to distract him. We started talking about baking (my grandpa loves to bake and cook). He always tries to send me back to LB with new cookbooks, and Taste of Home magazines…haha. Not that I have anything against Taste of Home but I never thought I would find an ultimate pumpkin recipe in it. I made Pumpkin Chocolate Chip Cupcakes…MMmmmMMMm…

 So I guess I really have to thank my grandpa for giving me like six Tast of Home magazines, or else I would have never had found this great recipe. Thanks grandpa! I can’t wait to show him the pictures of the cupcakes, he is going to be so excited!P6280130

I brought in 12 cupcakes to work on monday night…there was only one left for the morning crew the next day…AWESOME!

Best Yet Cupcakes! Strawberry Lemonade mmmm

Okay so I got this recipe from my Sis’ bff’s baking blog and they are AMAZING! My frosting didn’t turn out quite like hers did, so I made it into an ICING instead…still pretty. These Strawberry Lemonade cupcakes are perfect on a hot day, or if you are just looking to bake something that takes little to no effort!

 

The only unnatural sugar in these cupcakes is the sugar from the strawberry geletain…which actually has a lot of sugar in it now that I think about it! But no added sugar besides that….well there is also the icing on top that you have to add like six cups of powdered sugar to thicken…hahaha.

 And the finished product! Everyone at work loved them. Emily said they were my best cupcakes yet…although I am always trying to out do myself so we will see!

By the way Lindsay got me this snazzy new TRIPLE cupcake carrier as an early bday present…she said she couldn’t resist giving it to me when she saw me baking these! Look at how nice my cupcakes fit inside!
